Have you been to market and seen some of the tomatoes? The farmers market, organic farm stands, co-ops, even a select few of the mainstream grocery stores are sporting incredible varieties this season. Inspired by the tomatoes all around me, I put together a brilliantly colored flatbread last night. Beautiful and delicious, it’s a snap to make.
It’s color so good you can taste it. Thinly sliced yellow, green and red tomatoes are the foundation for this simple treat. It’s easy to make: brush your favorite flatbread crust with olive oil, sprinkle lightly with shredded quesadilla cheese, add your tomatoes, and season with fresh basil. (Try a few leaves of spicy basil for an end-of-summer kick.) Bake at the required temp for your flatbread (mine was 450° F) until the cheese melts (10 minutes). Enjoy!
