I understand that Albuquerque, New Mexico is at least 500 miles from the nearest large body of water, but I just had the most amazing fish tacos at Seasons Bar & Grill’s rooftop cantina. They were made with ahi tuna, fresh veggies, and a twist of pineapple. I ate all three of them. Rarely do I eat that much of anything! They were that good! Next time you make fish tacos, try adding a touch of pineapple. It softens the fish and adds a little kick to the spices.
