Warm-Up With This Sweet & Spicy Snack
It’s a delicious time of year with the holidays just around the corner, but here in Minnesota the weather is about to turn brutally cold. I heard a prediction of -9° F. Brrrr! I’m a little bummed because when temps drop low that means no snow. I’m hoping the weather folks are wrong and once my holiday travelers have arrived all safe and sound, we’ll get that magical white, fluffy Christmas snow. I have a shiny new pair of snowshoes that need a few miles put on them, a couple of fun new camera lenses, and an awesome trail that I’m ready to try out. And it would be so fun to get an outdoor family photo this year.
But, I’m may have to alter my holiday vision so a baking I will go… When winter temps dip down so low that my knees shiver just thinking about going outside, I know it’s time to make these Sweet & Spicy Pecans. They’re low in carbs and high in protein. My older kids love them, too. They’re such a hit that I’ve made three batches. That’s 12 delicious cups. I can’t think of another recipe that I’ve made three times in less than two weeks.
I’ve made this recipe so many times, I could probably make it in my sleep. If you’ve been reading More Than Oregano for awhile (six years?) this recipe may look familiar to you, too. It was one of my first posts. Back then, I was so new to blogging that I hand typed it into the post. Cooks needed to “copy and paste” in order to get it. So, here it is again in an easy-to-download format. If you get a chance to make it, drop me a line in the comments. I’d love to know.
In the meantime, may the holidays wrap you in warmth and merriment. May time with those you love bring you great joy! And, may your remember that our Savior, Jesus who came in a manger, loves you dearly no matter what’s happening in your life. Merry Christmas!
